Make an Easy Apple Puff Pastry with Me

There’s something about apple season that makes everything feel slower and sweeter. After a crisp afternoon picking apples at All Seasons Orchard in Woodstock, Illinois, we came home with more apples than we knew what to do with. Instead of overthinking dessert, we leaned into simplicity, and that’s how these easy apple puff pastry snacks came together.

For these turnovers, you’ll want puff pastry dough, usually found in a slim box in the frozen section. Trader Joe’s version comes with two folded sheets, and the package clearly explains how to thaw it. The best part? You don’t even need to roll it out, just unfurl and cut.

What you need:

  • Puff pastry dough (Trader Joe’s works great)
  • Fresh apples and cut into small squares
  • Parchment paper (comes with the dough)

Optional:

  • Granulated sugar
  • Ground Cinnamon
  • Powdered sugar for dusting after baking

Making the snack:

  1. Prep the apples. Cut them into small squares. Place them in a large bowl and set aside.
  2. Preheat the oven. Line a baking sheet with parchment paper. Temperature note: The recipe baked at about 415°F, but Trader Joe’s puff pastry recommends 400°F.
  3. Unfurl the puff pastry. Once thawed (it should still feel cold), gently unroll the pastry sheets.
  4. Fill the turnovers. Spoon a small pile of diced apples into the center of each piece you have.
  5. Optional: Add sweetness and spice. Sprinkle one spoonful of sugar and a dash of cinnamon over each mound of apples.
  6. Optional: Shape the turnovers. Pull all four corners of the pastry toward the center, like an envelope, and gently press the edges together so they stay sealed.
  7. Bake. Place the turnovers on your prepared baking sheet and bake for about 15 minutes, or until puffed and golden brown.
