I love whenever we meet a new Lebanese relative from our family tree because they have the best stories to tell. When I was little, my grandparents used to always talk about their migrating experiences from Lebanon to Nicaragua. From the history to the culture to the cuisine, it’s all so unique. I just fall more in love with my culture every day. *Don’t worry, Papi, I love Cuba too.*

*Prepárate (prepare yourself in Spanish), because this is something to take in…* My grandfather’s dad is the brother of the relative’s mother. You might have to recite that a few times or visualize it, so I totally understand/ Here, I’ll even pause for you.

Where were we? Ah! Kibbeh! I’ll make it short and sweet, because it you cook anything like me, you’ll need all the instructions you can get.

These are the ingredients.

01. two 9.5 x 13.5 x 2 in (3 qt) pyrex
02. 4 lbs ground beeF, lean 90.96%
03. 4 lbs burgol #1 fin cracked wheat
04. 1 large onion
05. 1 small onion
06. pam, or alternative

While everything’s being processed, use your pan to cook 1 lb ground beef as “stuffing” for the kibbeh. The stuffing is the center area of the 3-layered kibbeh. Chop, then add the small onion and salt & pepper to taste. Now you’ve cooked a portion of the ground beef!

After that’s finished, move onto working on the rest of the beef. Chop 1 large onion or use a food processor with salt and pepper to taste. With a separate plate or dutch oven sized bowl, soak the burgol with water. Use 2 cups of water for 2.5 cups of burgol. Then, insert every 4 lbs of burgol per every 1 lb of beef added. If it’s easier or faster for you, you can also use a food processor, like we used. To make the contents soft, just add water as needed.

This is your time to shine with whatever Pam option you decided on. Spray lightly to the pyrex! Add processed beef to the pan and start the layering process.

  1. Pam the Pyrex
  2. Processed ground beef
  3. Cooked 1 lb beef from the pan earlier
  4. Processed ground beef

The finishing touches are adding slight lines with a knife to the top of the kibbeh and the edges. I think it’s decorative, but also easy to cut once it’s cooked. Drizzle oil to give it that crunchy feel, if you want. Set the oven for 350° for 45 min to 1 hour. Just make sure it’s brown when you take it out of the oven.

I don’t know if I’ve gotten lazy or what, but the smallest amount of ingredients I need for a quick recipe fits the bill. Breakfast is the most important meal of the day, but arriving to work early is also necessary in my current lifestyle. If I could use a sauce to make things more interesting, then ON MY WAY.

These are the four ingredients you’ll need:

  • Your choice of bread, 1 slice
  • 1 egg
  • 2 slices of bacon
  • secret sauce
  • optional: seasoning

As the photos show, add each ingredient on top of each other into the air fryer. Place it at 370 degrees for 10 minutes. If you like your bacon crispy, but less burnt, I would place it for less time.

Sprinkle the sauce onto your meal and it’s ready for munching! Small Axe Peppers does it again!! The best kind of meal is one that offers all the nutrients I need and still makes it a good on the go meal.

Since traveling to Spain for my study abroad trip, patatas have been something that’s just grown on me. They eat patatas with literally everything! They made this aioli kind of sauce and I haven’t really seen it since I’ve been there; well I have, but not the same.

Any who-

All you need is:

  • potatoes
  • cheddar cheese
  • green onions
  • seasoning
  • special sauce
  • optional: sour cream

Grab a pan, slice the potatoes in half, and wrap them in aluminum foil. Place it on the pan, and into the oven for 400 degrees for 45 minutes. I also might’ve cooked in so late at night, that I had it the next day. So I grabbed my aluminum potato, placed the green onions, cheese, and seasoning in the microwave for 30 seconds for a quick melt.

I added the special sauce to spread over and while it was a bit spicy, it added the flavor I was missing. We love a good partnership- Thank you Small Axe Peppers for adding that extra spice in my life.

Even my fiancé ate my meal. You know it’s good when my cooking is better! Woo!

I had the opportunity to work with Small Axe Peppers in creating a recipe with their added bonus– SAUCES. They sent over a few different kinds based on our top three from their site. Honestly, I’m excited.

Before I get into the whole recipe, I’ll give you a little snip on Small Axe Peppers.

Small Axe Peppers connects you directly to urban farms and community gardens in your neighborhood. With more than 75 community gardens in 15 cities across America, they they collectively grew almost a ton of serrano peppers, and a new economic model for urban farming was born!

We used Queens 7

All you need:

  • Small Axe Peppers: Queens 7 sauce
  • 9 eggs
  • 1 red bell pepper
  • 4 turkey slices
  • Half a handful of spinach
    • Optional: add other veggies to your liking
  • Choice of seasoning: salt, pepper, cilantro
  • Choice of shredded cheese: colby jack, provologne

HOW TO: 

  • Grab a cupcake pan and spray it with non stick. I used avocado spray! You can obvi use Pam or your preference too.
  • Chop the red bell peppers and turkey slices, in three quarters to make it through 12 slots in the cupcake pan
  • Optional: add other veggies to your liking.
  • In a separate bowl, crack 9 eggs (assuming a 12-cupcake pan), add seasoning, and beat together. 
  • Place each mixture in different holes in the pan and make it even, so it doesn’t overflow. I did ½ cup in each! 
  • Preheat to 350 degrees and put a timer for 15-17 minutes. 
  • Add shredded cheese in minute 13 so it melts with it!

Just to give you some back story, my best friend made a similar recipe, so I may have borrowed it and modified it. It was SO good and I may have already made it a few times since. It’s a quick on the go kind of breakfast and doesn’t take much prep work. I think this is an amazing way to add all your favorite ingredients for a healthy breakfast too. The sauce also gives it great flavor!

One of my friends has this special cake for his birthday every year. This year, he had it a little different and further from home. His fiancé, Victoria, wanted to keep the tradition alive, so she did. Before we get into the nitty gritty of the cake, here’s a little dedication she has for him:

My favorite family tradition is making my future husband his beloved Kahla Cake. It’s only made once a year, reserved for his birthday. Previously made by his mother with all the love she could muster, this tradition has now been passed onto me with expectation that I will never miss a year. It’s a tradition I hope to uphold until the day I die. Love you Joseph. Happy 27th Birthday!

There’s two parts to the cake: the cake and the frosting on top. My friend loves the actual cake, so that’s what was made. I’ll help you with the frosting later, if you’re still interested in adding that.

The Kalua Cake

Grab your ingredients in the nearest store:

Disclaimer: We were pressed on time and wanted to make it special for the day of. So the cake is made from mix, not from scratch. It still got the job done!

  • A package of yellow cake mix
  • ½ cup of white sugar
  • 1 large box of instant chocolate pudding and pie filling mix
  • 1 cup of oil
  • 4 eggs, but beat them
  • ¼ cup of vodka
  • ¼ cup of Kalua
  • ¾ cup of water
  • your choice of cooking spray

Let’s get this party started!

Grab all the dry ingredients and throw them into a large bowl. It’ll be the cake mix, sugar, and pudding mix. Don’t literally throw them, but just add them. Now add the wet ingredients. Make sure you have the oil, eggs, vodka, Kalua (most important), and water.

Mix everything for one minute at slow, then four minutes at medium speed.

While you’ve made the cake in the bowl, add cooking spray to the bundt cake pan. Let’s not stick the cake to the pan!!!

Bake it all at 350 degrees for an hour.

Allow the beautiful Kalua cake to cool for ten minutes and flip it onto your cake stand or plate, however you’d like to present it to your hungry tummies; or in this case, Victoria’s fiancé.

And for the frosting– it’s quick and easy!

You’ll need ½ cup of powdered sugar and ½ cup of Kalua. Whisk them together and pour over to serve. Easy, right?!

A few extra adds

I know other people have made this cake with a bunch of different recipes and ingredients. So some other add-on’s you can use to make this cake delicious in other ways are:

  • can add chocolate chips in the frosting
  • instead of yellow cake, it can be chocolate cake
  • serve with vanilla ice cream

I hope you’ve enjoyed this special treat. It’s honestly extremely easy to make. It’ll probably take you about an hour or so to create this delicious beauty. TIP: Either make it the night before or the day of. You’ll want to maximize on the moist-ness of the cake (if that’s even a thing). I’d also recommend to only store up to three days, but if you’re anything like my family and I, it’ll probably be gone within the first hour. Let me know if you try it!!!

I think I underestimated how much I’d actually like this kind of dish. My boyfriend has a funny way of showing his cooking skills, and this one just melted my heart in a different way. It’s one of the simplest dishes to create and one that the whole family would appreciate!

All you need is:

  • your fave seasoning: salt, pepper, cayan pepper, and/or other
  • 2 packs of english muffins
  • 2 packs of mozzarella slices
  • 2 roma tomatoes
  • 2 ripe avocados
  • 2 large onions
  • A pack of turkey or ham, whichever you prefer

The Steps are Quite Simple:

Chop your tomatoes and onions. Spoon out your avocados. Cook the turkey or ham pieces. Give your onions some flavor. Of course, add your choice of seasoning to your tasting.

Let’s start with the muffins:

Spread the avocado onto the muffins. Start placing the cut up ingredients! Easy, right?!

Now add the muffin melts into the oven on parchment paper and a pan at 350 degrees for 10 minutes, or until the cheese melts to your liking.

We had so much fun re-creating this dish in one of our favorite recipe books by Tasty. Here’s a similar one I found! We added seasoning to our liking and fed all tummies well.
